LE NOSTRE OLIVE IN SALAMOIA (English translation below)
Appena raccolte le sistemiamo in una bacinella, coperte d’acqua.
Per 40 giorni cambiamo l’acqua ogni giorno.
Si prepara una salamoia bollendo acqua e sale (1 lt acqua/ 3 cucchiai abbondanti di sale).
Si lascia raffreddare.
Si incaraffano le olive e si ricoprono con questa salamoia, si chiude la caraffa e si lasciano tranquille 60 giorni minimo.
Prima di utilizzarle, sciacquarle. Si mantengono anche 3 anni e sono ottime.


As soon as the olives have been picked, place them in a plastic bucket and cover them with water and change the water daily for the next 40 days.
Next you will need to prepare a brine by boiling together 1 liter of water and 3 heaping tablespoons of salt. Let cool.
Next step is to fill up jars with the olives the cover with the cooled brine. Close the jars tightly and let sit for at least 60 days.
Before using, rinse the olives to remove the brine.
The olives will keep for up to 3 years and are wonderful.
