The time has come . . .

As I wrote a couple of weeks ago, havest was knocking on our door.  Well the big moment has arrived.  On Wednesday (14 september) we will start the harvest.  This is about 3 weeks earlier than normal but as you know, this has not been a normal year weather wise.  It is still very hot here (high 80’s) and so the sugar in the grapes has developed well.

We will start on Wednesday picking the Cabernet Sauvignon and Merlot that we use for our Super Tuscan and then we will pick the Trebbiano and Malvasia Bianca grapes.  The Trebbiano will be used not only as a little boost for our I.G.T. but also to make our Vin Santo.

Vin Santo is a dessert wine we make that is made by laying the grapes out on bamboo and letting them dry out for 40 days.

Once they have lost their water, we then make a wine that is 19% alcohol.  It is then aged in barrels for 3 years. Once it is ready we bottle it.  This is the finished product!
