Cold & Rainy? Time for Chocolate!

You would think that by mid March in the Chianti, the weather would finally let up and we could enjoy some sun but it is cold, rainy and overcast so we thought a good, hot, chocolate cake dessert would warm up the day.  Hope you enjoy this recipe from Siena!


 300g – 10.8 oz.  baking chocolate
100 g.- 1/2 cup butter
150 g – 3/4 cup sugar
4 eggs

Melt the chocolate together with the butter.
Mix the yolks with the sugar then add the melted butter and chocolate.
Whip the whites and incorporate them into the chocolate mixture.
Melt some butter and grease single serving moulds and then put them in the fridge for a minimum of 10 minutes.
Fill the moulds halfway with the chocolate cream.
Put into a preheated oven (350° F) for 14 minutes. 
Serve warm.
